		<description>If you&#039;re vegetarian a key word to remember is Gujerati. I don&#039;t know if it&#039;s the name of a specific area in India but Gujerati cuisine is vegetarian. A &#039;Thalli&#039; is a vegetarian selection of dishes served with boiled rice and nan bread. Some typical recipes to look up on the internet are, Tarka Dall, Masoor Dall, Bombay Potatoes, Cauliflower Bhaji, Cabbage And Carrot Gujerati. These dishes would form a good &#039;Thalli. Dall is quite important in the vegetarian diet as it is a prime source of protein. If you have trouble finding these dishes on the internet drop me a line and I&#039;ll sort out the recipes for you.
   Don&#039;t know how long you&#039;ve been a vegetarian or how much experience you have of Indian cuisine but my kids are all vegetarian even though I&#039;m not. We&#039;ve always been curryholics and my kids affirm that as a vegetarian, Indian cuisine gives you a vast selection of dishes to try. My eldest son can prepare a good spread of Indian dishes. .....my favorite place also has a vegetable vindaloo......the best way to find what you like best is to try different stuff and different restaurants (they vary), most places will have a pretty good description of what the ingredients are. 		<description>Some restaurants may have different names for different dishes, but here are a few good ones.

Appetizers:

Samosas- dough made from all purpose flour, rolled and stuffed with boiled potatoes and peas, spices and then deep fried in oil.

Pakora platter- onion pakoras- onions mixed in gram flour batter and deep fried.

potato pakoras, paneer(cottage cheese cubes) pakoras.


Main course:

Punjabi dishes-

Black dal/dal makhani - red kidney beans(lentil) and red whole lentils cooked in tomato sauce and spices.

Palak paneer or saag paneer, spinach and cottage cheese cubes sauted in cream sauce and spices.

Malai kofta- fried koftas (made using cashewnuts and gram flour,spices) cooked in gravy.

mutter paneer- green peas and cottage cheese cubes cooked together with onions, tomato puree spices.

Veg kadhai- mixed vegetables cooked together- green peppers, cauliflower, carrots, peas, paneer, string beans.

Chole masala- chick peas cooked using, onions, spices and tomato puree.

Baingan Bharta- eggplant first grilled and then peeled and mashed and cooked with spices.

Aloo gobi- Cauliflower and potatoes cooked together with onions, tomatoes, spices.

Bhindi masala- okra cooked with onions, tomatoes and spices.

South Indian dishes-

idli (cakes steamed from rice flour and split lentil flour batter- they r not sweet ) served with chutney(green chillis, coconut and , curry leaves and cilantro ground together) and sambhar made from yellow lentil cooked with veggies- this is a liquid form in which u dunk the idli in and have it)

Dosa- Same batter above spread on a griddle and roasted both sides, served with chutney and sambhar.

Masala dosa- Dosa stuffed with potato and peas veggie.

Uttappa- the above batter spread on a griddle to make a thick cake about half an inch in thickness, onions, tomatoes, cilantro and green chillis spread on top of it and then its flipped over and cooked on the other side, again served with chutney and sambhar.

medu vada- fried rice and lentil dumplings, served with C &amp; S

Rice dishes

Veg biryani or Veg pulao- veggies cooked with herbs,spices cashew nuts and sometimes raisins in basmati rice.

All the above dishes are pure veg. You may find different dishes in different Indian restaurants. You get yummy Indian food in NY (Jackson heights) and NJ (somewhere near Edison) and a few other places. I cannot describe how the above dishes taste, u ll have to taste them urself to know.
