Later, invasions from Central Asia, Arabia, the Mughal empire, and Persia, and others had a deep and fundamental effect on Indian cooking. Influence from traders such as the Arab and Portuguese diversified subcontinental tastes and meals. As with other cuisines, Indian cuisine has absorbed the new-world vegetables such as tomato, chilli, and potato, as staples. These are actually relatively recent additions.
Islamic rule introduced rich gravies, pilafs and non-vegetarian fare such as kebabs, resulting in Mughlai cuisine (Mughal in origin), as well as such fruits as apricots, melons, peaches, and plums. The Mughals were great patrons of cooking. Lavish dishes were prepared during the reigns of Jahangir and Shah Jahan. The Nizams of Hyderabad state meanwhile developed and perfected their own style of cooking with the most notable dish being the Biryani, often considered by many connoisseurs to be the finest of the main dishes in India.
During this period the Portuguese and British introduced foods from the New World such as potatoes, tomatoes, squash, and chilies and cooking techniques like baking.

TANDOORI MASALA recipe
Ingredients:
1 tsp Garlic (Lasun) Powder
1 tsp ground Ginger (Adrak)
1 tsp Cloves (Lavang) Powder
1/2 tsp grated Nutmeg (Jaiphal)
1 tsp Mace Powder (Javitri)
11/2 tblsp Cumin (Jeera) Powder
2 tblsp ground Corriander (Dhania)
1 tsp Fenugreek (Methi) Powder
1 tsp ground Cinnamon (Tuj/Dalchini)
1 tsp fresh ground Black Pepper (Kalimirchi)
1 tsp ground brown Cardamom (Elaichi) Seeds
2 tsp Red Food colouring
How to make tandoori masala:
Mix all the above ingridents, without roasting them first, push through a fine sieve. Store in an airtight container. Close the lid tightly after use.

If you are hiring a caterer, the gratuity or "service charge" is generally included in the contract.

What ever you come up with make sure that you do a full costing on each recipe (find out what it costs to make it). Better to know that you can’t make a profit on something before you put it on a menu.
For any menu the biggest thing to remember is to know the ingredients for every item. You don’t want 20 entrees that each uses 4 to 5 different ingredients. You want a good deal of cross over for you ingredients. It’s easier, and cheaper in the long run, to order 50 pounds of carrots that are used in 5 entrees, most all of the lettuce mixes for salads, 3 apps, and a dessert than to order 2 pounds for 1 entree. Each ingredient takes up space, whether it’s in a cooler a freezer or in dry storage. You need to keep in mind not only what you customers will like and what they can afford, but how maximize your inventory. Inventory equals money sitting on a shelf.

How do you take out the fish odor from the carpet in the trunk of my car?
I picked up take out for my work the ojher day and it was seafood. I put it in my trunk and when I opened the trunk to take the bags out I realized that one of the bags tipped over and some "fish juice" had spilled in the trunk of my NEW car!! I washed it with a carpet cleaner, did not work, sprayed febreeze, did not work, finally I got it detailed. The smell is still there not as bad as before but my whole car REAKS!! I have car fragrances for the good smell all over my car! I need help?? Can anyone give me an idea that WILL WORK?? I cannot stand the smell anymore!
